Tuna & Apple 'Sandwich' with Chocolate - Trust me!

I first saw Tuna with chocolate watching some foodie travel show on Netflix, and made this for lunch the next day. It's been a regular occurrence ever since!



This is a remake of GFRR's Tuna and Apple Sandwich below. One of the things I love the most about GFRR is the flexibility to adapt! This recipe serves 2, I made mine into the platter above, the other person here did theirs as a wrap.


So here's what I did for the GFRR Swaps, so you can see how to do the same with other recipes:

  • Removed the bread, replaced that with crackers on the side and 1/2 cup Quinoa in the tuna.

  • I needed my tuna moist, so I left some of the can water and moved my 'side of dip' under perfectly balanced INTO the tuna! That gives me 1/2 cup of moisture to play with

  • I snacked on some fruit while prepping, to replace the extra apple I wasn't using

  • Swapped out the veggies for what I had on hand. After all the holiday indulgences I'm crushing hard on Dorothy's homemade Sauerkraut!

  • FYI - ANY recipe on this recipe site that's in the GFRR Category will already be perfectly balanced or will tell you how to do it, you can simply grab and cook!

Ingredients for 2 Meals:

  1. 1 Can Tuna - I only purchase pole and line - Google it!

  2. 1 cup Quinoa

  3. 1 apple, diced

  4. Mayo & Greek Yogurt - I used approx 1/4c each

  5. 2-3 tsp Guacamole mix

  6. Sprinkle of Cocoa Acai (optional, but why wouldn't you?!)

Combine first 5 ingredients! Scoop half onto a plate & sprinkle with Cocoa Acai. Serve with a small handful of crackers and surround with veggies. I used Celery & crackers as my Tuna Scoops. DIG IN!
