Triple Chocolate Breakfast Bowl

Chocolate and I have a love affair! This super chocolately, super healthy plant-based breakfast bowl makes me SUPER happy, and it's GFRR Perfectly Balanced. In my last home I had a stencil along the wall of my kitchen, that said in Latin, Hand over the chocolate and no one gets hurt, lol. Accurate.


This is an 'oat free' oatmeal, basically!

  • 1/2 cup cooked Quinoa (I do mine in my steamer, double water to quinoa, 12mins walk away)

  • 1 Scoop Epicure Cocoa Acai (skip this if you don't' want it super chocolate!)

  • Splash of vanilla

  • Dash of salt

  • 1/2 - 1 tsp of Potato Starch (or cornstarch) - It's used as a thickener & replicates the creaminess that happens when you cook oats. It can be skipped!

  • ~3/4 cup of Cashew or other milk (use less if not using Cocoa Acai or the thickener)

TOPPERS!

  • Epicure Cocoa Crunch as a topper

  • 1 Tbsp Pepitas (Pumpkin Seeds - very high in iron!)

  • 1 cup berries - I'm still using the frozen Raspberries from my 50' Raspberry trench!

Combine first 7 ingredients in a bowl, stir well and pop it in your microwave for 2 mins (or cook on stovetop). It will thicken up as it cools down to edible! Top with your toppers and dig in!
