Steamy Mocha Breakfast Bowl

First off, Chocolate! Best way to start your day. Second Coffee. Third - perfectly balanced and part of a healthy balanced day. Four - Plant based deliciousness! What can get better than that?


This is ready in minutes, it's GFRR aligned and you'll stay full for hours. And did I mention the Chocolate?

Mocha Breakfast Bowl
  • 1/2 cup cooked Quinoa (in my steamer, double water to quinoa, 12mins walk away)

  • 1-2 tsp Instant Coffee or Espresso Powder

  • Splash of vanilla

  • Dash of salt

  • ~2/3 to 3/4 cup of Cashew or other milk

TOPPERS!

  • 1 Tbsp Pepitas (Pumpkin Seeds - very high in iron!)

  • 1 cup berries - I used Haskap & Strawberries from my backyard fruit forest

  • I added a few Borage flowers for extra Omega 3's

Combine first 6 ingredients in a bowl, stir well and pop it in your microwave for 2 mins (or cook on stovetop). It will thicken up as it cools down to edible! Top with your toppers and dig in!
