Roasted Cauliflower & Peas Tandoori

This plant based version is made with Coconut milk instead of dairy and began my obsession with Epicure's new Tandoori Seasoning! Next best thing to heading out to your local Indian Restaurant!

Ingredients - serves 6

  • 1 Cauliflower

  • Olive Oil

  • 1 cup peas per person (this is your plantbased protein)

  • Rice - I did a quick 10 min Basmati in my steamer!

  • 1 Onions

  • 1 cup Coconut Milk

  • 2 cups Veggie Broth - I used this one

  • Fresh Lime

  • 2-3 Tbsp Tomato Paste

  • Cilantro - skip if you hate it

  • 1 bag Tandoori Seasoning


  1. Toss your chunks of Cauliflower in Olive Oil, sprinkle with a Tbsp or two of seasoning and roast at 425 while you prep the rest!

  2. Chop your onion into chunks and Saute in Olive or Avocado oil with Turmeric Pepper and Herbed Garlic. See below. One that is starting...

  3. Simmer Broth, Coconut Milk, Tomato paste & rest of your Tandoori Pkg.

  4. Once your sauce has thickened, add juice of a lime and salt to taste

  5. Toss your peas in the steamer and heat through. It took me approx 2 mins per cup.

Plate it up, toss on some Cilantro and dig in!
