I love the flavor of chicken salad in a papaya, it was a favorite at a restaurant I worked over 20 yrs ago and was a hit with the teen boys here today!
3 cups cooked cubed chicken
1/4 cup diced red pepper
Classic Epicure All Purpose Sea Salt to taste (1/7th of the salt and more flavor than traditional)
2 mini dills, diced
1/4 of a celery stalk, diced
2 tbsp of Olive Oil packed Sun-Dried Tomato's - rinsed and chopped
Papaya - I like them when they're just starting to ripen and aren't super soft or sweet yet
Cut a flat spot on the bottom of the papaya so it stays stable on your plate & load full of chicken salad! Dig in!
