My friend Jen shared this recipe at her Cooking Class and I fell in love. Everyone I've made it for has RAVED and asked for the recipe. Here's Jen's delicious Bellini Copycat Recipe
A Bellini has 3 parts - Slushy Bellini goodness, Grenadine and Boone's Sangria
Slushy Bellini Mix: Grab an Empty bottle - I use a screw top wine bottle - and fill it thusly - You'll keep this mix on hand for future use.
1/2 bottle White Wine
1/4 bottle Sourpuss Peach Liqueur (she uses regular peach liqueur but I prefer the sourpuss)
1/4 bottle White Rum
If this 1/2 bottle and 1/4 bottle stresses you out, mix 2 cups wine, 1 cup each peach liquor and white rum!
1/2 fill your blender with ice (when I make it in my Bullet blender I cut the peach crystals in half)
Pour in Bellini Mix (wine, rum, peach) to 2/3 up the ice
Add 1/4 cup Peach Drink Crystals (I have found this locally at Save On Foods)
Sparkling water or club soda to the top of the ice
BLEND until nicely slushy & still thick
Pour a splash of Grenadine in the bottom of your glass
Fill glass with Bellini Slush
Top with a splash of Boone's Sangria
