GFRR Southern 'Fried' Chicken Dinner with Rice and Magic Broccoli

Souther Fried Chicken

  • 1lb chicken of your choice (I did thighs), rinsed

  • 1/2 pkg Epicure's Southern Bake Chicken Mix

  • Pour mix on a plate, pat chicken into the mix.  Bake at 350 until done

Favorite Seasoned Rice - makes 6 1/2 cup servings (we always make extra for kids lunches)

  • 1.5c jasmine rice

  • 1 Tbsp g&o or 1 Tbsp Broth Mix

  • 1 Tbsp butter

  • 3/4 Tsp salt

Cook 10 mins, let steam with lid on 2 more. 


Magic Broccoli - serves 4

  • 4-6cups broccoli florets (3/4lb)

  • 2-3tsp avocado oil

  • 4 cloves fresh garlic, crushed

  • 1 Tbsp Classic Epicure Garlic & Onion NY

  • 1/2-1 Tsp Classic Epicure SPG, aka dog

  • Fresh Squeezed Juice & rind of 1/4 lemon using Epicure's 2 in 1 Citrus press (to taste!)

You want your broccoli to be dry so that it roasts rather than steams. I put mine through a salad spinner and then whirl it around in a tea towel. Or wash it the day before and let it sit in the fridge!

Toss (I gently massage) broccoli with enough avocado oil to lightly coat. Add seasoning while gently tossing. Roast at ~400 for 20 mins. You want the broccoli to be caramelized on the top while still keeping a nice bite.

Sprinkle hot Broccoli with FRESH lemon juice & zest!  Get yours quick! It magically disappears in our house.

I built this meal using the build your own dinner and served it with the portion scoops and I am in LOVE!  We used our healthy fats with the avocado oil in the Broccoli and butter used elsewhere.
