This is a super un-fussy recipe that you can just slap together! My favourite kind!
* 1/3 cup sweet potato mashed (I steamed a small one for four minutes & ate the rest)
* 1 egg
* 1/4 cup +1 tbsp coconut milk
* 1 tbsp olive oil
* 2 tbsp creamed honey
* 2 tsp Epicure gingerbread spice (Seasonal)
* pinch of Epicure salt.
Combine all ingredients and whisk well.
* 1/4 cup tapioca flour
* 2 tbsp coconut flour
Let sit 5 minutes so the coconut flour can absorb the moisture.
Whisk in 1 teaspoon baking powder.
Spoon into your Epicure petite pan
Top with a pinch of unsweetened coconut and a sprinkle of Epicure's Sweet Maple Topper.
