GF Brownie Cheesecake Bites

I used my gluten-free brownie mix as the base of my cheesecake and the entire family is in love.


Ingredients:

  • 1/2 lg egg

  • 2-3 Tbsp butter

  • 1 Tbsp sugar

  • 3 bricks of Cream Cheese

  • 1-2 Tsp vanilla

  • sugar to taste (About 1/4 cup)

  • 2 cups whipped cream

Method:

  • I whizzed my brownie mix in my magic bullet for about 30 seconds to eliminate the crunchy bits. This is optional.

  • combine brownie, butter, sugar and egg and knead into a ball.

  • Press into the bottom of a greased springform pan or a 9x9 or your Multipurpose steamer. Bake at 350 ~15-18 mins


Mean-while

  • Combine your cream cheese, vanilla & sugar and beat well.

  • Fold in your whipped cream (dream whip works too)

  • spread onto cooled crust. Refrigerate 5-6 hrs or overnight.
