Fruit on the Bottom Quinoa Chia BFast Pudding 2 ways

Updated: Sep 2, 2019

Serves 1 although I usually triple it! Yes, this is a Good Food Real Results recipe!

Ingredients

  • 1/2 cup Greek Yogurt (homemade is less tart & requires less sweetener!)

  • 1/2 cup cooked Quinoa - stale/dry is just fine, great way to use up leftovers!

  • 1.5 Tbsp Chia seeds

  • 1/4-1/2 cup Cashew milk (or almond or cow)*

  • 1/2 Tsp vanilla or almond extract

Combine first 5 ingredients. Add sweet dip (or add to fruit!). Set aside an hour or two (or overnight)

Add fruit to the bottom of your mug or dish. Top with quinoa mix.

Before serving: Top with seeds/nuts & your choice of Tutti Fruity or Cocoa Crunch

Love chocolate? Use Epicure's Chocolate Truffle as your sweet dip + add a scoop of Epicure's Cocoa Acai.

*It should be a bit runny when you first make it, that liquid will be sucked up by the chia. Adjust as needed based on the thickness of your yogurt & how thick you want the finished result
