Coconut Curry Stir Fry (4 servings)

Tonight’s fridge clean out gifted me a partial onion, 1/3 of a red bell pepper, a bunch of broccoli & some coconut milk. This is the result!


  • 1/2 pkg Epicure's Thai (Peanut) Stir Fry

  • 2 c coconut Milk

  • 1 c chicken broth

  • 3 cups Frozen Green Peas

  • 1/2 c sliced onions

  • 6 cups veggies of your choice - mine was Pepper & Broccoli

  • 1 Tbsp Soy Sauce

  • 1 tsp Fish Sauce

Top with: 1 cup Mojo Sautéed Chick Peas

Fry onions in a bit of olive or avocado oil. Add seasonings and stir 1 min to release flavors. Add veggies, cook 2 mins. Add remaining ingredients. Simmer until Broccoli is done & peas are hot.

I served mine on Quinoa & topped with 1/3 c Mojo Chickpeas to get perfectly balanced protein #gfrr

To Perfectly Balance for Good Food Real Results using BYOD as a guide:

  • a portion of protein (ie, 1 cup chick peas or 1/2 c of chicken)

  • a portion of grain/starch (1/2 c rice, corn, yam, etc)

  • Your Healthy Fat is taken care of, add 1.5 -2 cups more veggies
