Chicken Tortilla Soup

This is a go-to when I have only 20 minutes and want hot fresh sup. Makes 6 GFRR Portions. Pair with a big side salad or a serving of veggies

Chicken Tortilla Soup


  • 3 cups corn

  • 1 to 1.5 cup cooked beans (or 1 14oz can)

  • 1 1/4 lb cooked chicken (I used a rotisserie chicken)

  • 3 cup Epicure's Classic chicken broth

  • 6 Cups tomato sauce (I use the giant cans from Costco - could do with diced or crushed tomatoes)

  • 2 Tsp Epicure's Classic Fajita

  • 2 Tsp Epicure's minced garlic

  • 1 red onion, minced

  • Big handful of chopped Cilantro

  • 1 Lime, Tortilla chips and Cheese


Can easily adapt for stove top!

  1. Cook onion in 1 cup broth for 2 mins while you gather your remaining ingredients. 

  2. Once onion is softened, add remaining broth, garlic, fajita, tomato, beans and corn.  Cook 5-6 mins until hot and fragrant. 

  3. Check and adjust seasoning. 

  4. Add chicken and cook until chicken is heated through (1-2mins)

  5. To Serve: Add a squeeze of fresh lime (using your citrus press) & top with crushed tortilla chips and cheddar cheese.
