Breakfast Sausages!

This is SOOO good so ignore the ugly photo, lol! I found a recipe online, removed the junk and tweaked it a bit and boom, DELISH! I've given this recipe to dozens of people and they all love it.

  • 3 lbs Ground Pork - approx 1/2 a Costco Chub

  • 3 tsp ground sage

  • 3 tsp salt & 1.5 tsp pepper (or 1.5 Tbsp Epicure SPG)

  • 1/3 tsp dried Marjoram

  • 1/2 tsp Chili flakes OR Epicure Poco Salsa

  • Pinch of Cloves - too much equals disaster.

Put your pork into a large bowl and spread it out to the sides. Sprinkle the spices across the surface instead of dumping them in a clump, it makes it easier to get it nicely blended. Dig in, arms up to the elbows if necessary, to get that all blended in.

Refrigerate or freeze in whatever size portions your family will eat. I load mine into leftover Hummus Containers

To cook: grab a handful, form into into a patty and fry. HOT TIP: mix up your batch and fry a test patty to ensure it has enough seasoning before freezing.
