My son loves Costco 7 Grain salad, he can eat the $10 Container in one sitting, although his waistline and budget needed me to give that salad a makeover! This recipe is GFRR Perfectly Balanced, of course!
Here's my version. I gave a bowl of it to a friend that was here and she texted me from home saying she had to have the recipe, so here it is!
My version uses Black Lentils (Urad), because they're AMAZING and my new obsession. I'd also have included 1/2 my protein Chick Peas although they were still in the pressure cooker, those Desi Chick Peas take FOREVER! NOTE: I cup raw Black Lentils = approx 3 to 3.5 cups cooked
4 Perfectly Balanced GFRR Portions
2 cups COOKED Wild Rice - I love the Lundberg one!
4 cups cooked Lentils/beans
2 cups chopped green beans. Mine were fresh from the garden, so were not cooked. This would be great with Broccoli or snap peas!
1 diced bell Pepper
2 cups other veg - I used Swiss Chard and Beet Stems because that's what I had on hand. Carrots, asparagus, beets, celery, etc would all be delicious!
To serve, pour 2 Tbsp of Turmeric Goddess Dressing over your own bowl. Top with a spoonful of Pumpkin Seeds and Craisins. Also delicious with a crumble of feta or goat cheese! Let your imagination run wild!
