Hash Brown Casserole

Hash brown casserole was a hit. Quote from Lex's friend 'I wish there was an endless supply of this amazingness in my bowl'. Today I cracked eggs into it as it went into the oven for 20 mins. :) One Dish Hash-brown Casserole with NO cans of soup! GF, Egg Free.

Ingredients:

  • 1.5lb Frozen Hash browns ~ 5 cups

  • 1 pkg Epicure's Alfredo mix, 2 cups milk

  • 2 T butter

  • 1 tbsp each Epicure's 3 Onion and CCB

  • 1 tsp of your fav Epicure salt

  • 1/2 cup greek yogurt (or sour cream) try my DIY steamer yogurt

  • 1 cup cheese (I used Jack and Cheddar) In your Epicure MP Steamer combine milk, alfredo pkg, butter and spices. Cook uncovered 5-6 mins until bubbly and thickened up slightly. Stir in Greek Yogurt, cheese & hash browns Place lid on and cook 8 mins until heated through and hash browns are thawed. Pop into a hot oven for 5-10 mins to crisp up if desired.
