Oats dislike me, so I did a variation on overnight oatmeal.
1/3 cup Cottage Cheese
1/3 cup milk.
1/3 cup cooked Quinoa.
1 tbsp chia.
Splash of Vanilla Extract
1/4 tsp Almond Extract.
1 tsp Epicure’s Summer Berry Dip mix
1/4 tsp Epicure's Cinnamon.
Combine in bowl and set in fridge overnight. In the morning warm 1 cup of frozen berries for 2 mins. Add another 1/2 cup of Quinoa and your overnight ‘oatmeal’ mix. Stir to combine. Top with Almonds. I prefer this served with 1/2 cup Greek Yogurt instead of more Quinoa although need to Grocery shop!!
