Jicama Slaw

This is a delicious slaw with a rockin flavor! Note, I was out of cilantro and it was good without it although not as pretty.

Jicama Slaw


  • 1 cup of Jicama, shredded or Julienned - This photo was taken before I had my Epicure mandolin. It would be so much easier on that!

  • 1 lg carrot, shredded

  • 2 tbsp Cilantro, chopped

  • 1/2 tsp of Classic Epicure Chili Flakes and Garlic OR 2 tsp minced Jalapeno

  • 1/4 cup red bell pepper, thinly sliced

  • 1 Tbsp Fresh Lime Juice using Epicure CITRUS PRESS

  • 1 tsp honey

  • lg pinch Cumin

  • Epicure's Salt and Pepper to taste

Combine all ingredients. Let chill 30 mins.

1 portion starch - My favorite summer starch is steamed corn!

More Veggies - 2 cups is ideal!1/2 c of your Jicama slaw would be 1 GFRR Vegetable portion.
