Gluten Free Mexi ‘Pizza’ Bake

Thin crust, crispy potato base, topped with deliciousness! My daughter forgot to take it out of the oven, although it was still yummy even over cooked. 6 medium potatoes, washed 1.5 lbs ground beef 1 tsp taco seasoning Handful of corn Diced red pepper Grated cheese

Thinly slice your potatoes and layer on parchment paper. Brush a thin coat of olive oil on each layer before adding more.

Bake in oven at 420 for about 1/2hr. Potatoes will be cooked and near bottom crispy. Meanwhile season ground beef with Taco Seasoning and either fry until browned or pop into your steamer 3-4 mins.

When potatoes are done, sprinkle with toppings and bake 5-10 on bottom oven rack to heat the toppings, melt the cheese and crisp up the potato crust.
