Classic Artichoke Dip!

The classic recipe on the jar is delish, here's another version that people are going crazy for! I've made it with 'light' version too and it's still beyond amazing!



INGREDIENTS

  • 1/2 c Cream Cheese - I use brick but tub from Costco works too!

  • 1/2 c Greek Yogurt (or sour cream)

  • 1/2 c Mayo

  • 1/2 c Artichokes - I buy the marinated ones from Costco. You can get 2 big jars for slightly more than one can of plain artichokes!

  • 2 Tbsp Epicure Artichoke Dip Mix - Fall Season ONLY

  • 2 Tbsp Parmesan - fresh is amazing although the tube of grated is fine too

  • Add a few handfuls of fresh chopped spinach for an out of this world Spinach Artichoke Dip!



METHOD

  • Chop your artichokes into pieces, you want some chunks left behind, so don't mince it all up!

  • Soften your cream cheese a couple of seconds in the microwave if it's the brick kind

  • Combine all ingredients and mix well

  • Heat approx 2 mins in microwave until bubbly or if you're not already salivating, cook in over at 350 approx 20-25mins

  • Surround with veggies and crackers & stand back, there will be a stampede!

  • TIP - by far my favorite #glutenfree crackers are these ones from Costco!
